Cheese Potato Pie  This Cheesy Pie is simple and filling for any family.  Very tasty and can be supplemented with various vegetables, in Summer with a side salad or can be a meal purely on it's own.  This dish will serve four hungry people.

You will need the following ingredients, items and quanitities:

  • 1.5 kg of potatoes  (Preferably types that mash down easily - Whites, Maris Piper, Reds)
  • 3 Large Tomatoes (Vine or Plant)
  • 2 Large Eggs or 4 Small
  • 0.5 Kg of Medium or Mature Cheddar Cheese (Subject to your tastes)
  • Optional - 100g of Red Leicester cheese
  • Optional - 50g Finely shredded onion
  • A large Pyrex 10 or 12 inch (Oven Proof) Dish with Lid.

Cheese Pie Ingredients

  1. Peel and cut into small pieces all the potatoes and put into a saucepan and bring to boil, then simmer until soft.
  2. Put the eggs on to boil and when boiling turn down to low heat for 6 minutes (Hard Boiled)
  3. While the potatoes and eggs  are cooking take the tomatoes and slice - about 5 slices per large tomato or 4's if using small ones. You need to have about 15 slices or more in total.
  4. Now grate all the cheese in small strips.
  1. All done?  Good.  The potatoes  when pricked gently with a knife feel soft,  take off the heat, strain water off.  Adding into the saucepan a large knob of butter or vegetable spread and enough milk so that when the potatoes are mashed you have a creamy mash.
  2. Now take your oven dish and lightly grease the inside top surface down about  inch or so with butter or margarine - this is make life easier to wash up dish afterwards.
  3. Spoon enough mash potato into the bottom of the dish to a level depth of 3/4 inch (18mm).  Now arrange five slices of tomato on top.  Now lay some of the sliced egg in between the tomatoes.  On top of this spread about a third of the grated cheese on top.  Now carefully spoon another 3/4 inch of mash and repeat as previous layer.  Again ensure you level the mash right to the sides evenly to seal edges.
  4. Now again spoon enough levelled mash onto the previous layer to just below edge of dish.  Optional - Sprinkle finely grated onion.  Put the remainder of your cheese on top.  Optional - If you wish you can sprinkle another flavour of cheese on top lightly, ie; Red Leicester.
  5. Now lay four slices of tomatoe equally on top.   Done!

You can now place in oven straight away or keep covered with lid until required later.  To finish off immediately place dish in pre-heated oven at Gas Mark 5 or Electric 140 for 20 mins and then take lid off for a further 10 mins - this just lightly browns potato, tomatoes and fully melts cheese/s.

Now serve up with the addition of some lettuce leaves, cucumber and possibly beetroot slices.  In fact you can supplement the pie virtually with anything because the dish is so versatile.  ie; Baked beans, peas, runner beans and sweet corn.

Extremely filling and can be put together quickly if time is paramount.  If using later place in fridge but use within two days.  Increase oven time to 45 mins.  Ensure centre of pie is piping hot.
